Carrot Pulp Crackers

Carrot Pulp Crackers

Ingredients: 

4 cups carrot pulp (or whatever pulp is left over after you juice)
1 cup of your favorite flour ( for example: chick pea, almond, coconut, whole wheat, amaranth, etc.) 
2 tbs. chicken or vegetable base
1 tbs. garlic powder
1 tbs. cumin
1 tbs. paprika
3/4 cup water or chicken stock/bone broth
1 tsp. Olive Oil to coat pan & crackers

preheat oven to 350 degrees

Mix all dry ingredients together, then add water/broth to mixture  to form a paste. It should be the consistency of cookie dough.

Coat cookie sheet with 1/2 tsp. Olive Oil. Spread cracker mixture into pan, pressing down to completely cover pan with mixture. Next, score mixture into small squares. Coat top of mixture with 1/2 tsp. of Olive Oil and place in oven for 40 minutes. 

Take out of oven and flip crackers over. Cook an additional 40 minutes. Turn off oven and leave crackers in there to crisp up for another hour.

Persevere


Persevere: per·se·vere - verb :


·        To continue in a course of action, even in the face of difficulty
or with little or no indication of success.

·        To persist in a state, enterprise, or undertaking in spite of
counterinfluences, opposition, or discouragement.

·        To maintain a purpose in spite of difficulty,
obstacles, or discouragement; continue steadfastly.

Persevere. It's such an uncomfortable word. Who wants to be uncomfortable? Besides, what did it mean for me to persevere? For me it meant that when trials came my way, I would hold my breath until God decided to bring me to the surface once again for another breath. What I never understood is that God did not mean for us to live breath to breath. He never meant for us to get comfortable breathing in the world's oxygen or relying on ourselves to get  through the next trail on our own strength. He meant for us to learn how to live beneath the surface.... permanently.... Drawing on Him as our ONLY source of oxygen. He is the vine and we are the branches. Apart from Him we can do nothing. Are you a branch that's trying to go at it alone? ....coming back to the vine only when you're shriveled and ready to wilt? Sound silly? It is. Attach yourself to the Strong and Mighty Vine and persevere... for His yoke is easy and His burden light.

El Exiliado Cubano

Este homenaje está dedicado a mis abuelos, a mis padres, y a toda la comunidad cubana en el exilio. (Escrito originalmente como un homenaje a mi abuela Celia y leído en su funeral, septiembre de 2011.)


El Exiliado Cubano

Coraje, valentía, y el anhelo de vivir en libertad. Estas son las cosas que unen a los exiliados cubanos.

Un sacrificio de gran magnitud. Dijeron adiós a sus familias, amigos, y a su mundo entero para entrar en otro que no era el suyo. Todo para darle una oportunidad a sus hijos de vivir en libertad. 

El pueblo exiliado vive en dos mundos. Algunos hablan Inglés, pero todos sueñan en español. Sueñan con palmeras, la brisa salada del mar, la arena tan suave como el polvo, el bohio y la caña, el bolero y el son. 

Hay algo en la tierra que te vio nacer que te pide que te quedes, pero para el exiliado cubano, el anhelo de libertad es 
más fuerte aún. 

Gracias abuela, por tu valentía, por tu amor, por renunciar a tu mundo entero, perdiendolo todo, para darnos todo. 

Espero que mi generación nunca se olvide de los sacrificios hechos por nuestros abuelos y padres y lo mucho que el precio de la libertad les costó. 
Lo contaremos a nuestros hijos, y a los hijos de nuestros hijos.
Y nunca lo olvidaremos.
